Paleo friendly: Italian Frittata | Omelette

My husband is Italian, so on our journey with the Paleo lifestyle can be very hard on him at times. He misses his mom’s cooking, the Italian tastes, and flavors which is usually on some type of carbs. This recipe really hit home with him, it has most of the ingredients and has the taste he is missing. I make this for us for breakfast. I usually make a lot and then refrigerate the rest. you divide it out like pizza slices and reheat it in the microwave or oven.

  • 2 Sliced or ground Italian sausages (Sweet or Hot)
  • 1 cup Sliced mushrooms
  • 1 Chopped Roma tomato (Roasted Peppers that can be bought in a jar)
  • 6 Beaten eggs
  • 1/4 cup Chopped basil
  • 1 tsp Dried oregano
  • 1/4-1/2 cup Grated mozzarella Optional


  • Preheat broiler to high
  • Preheat 10 inch pan on high (need to be oven proof)
  • Add sausages and mushrooms and saute until cooked
  • Turn down the heat to medium, add in eggs and tomato/peppers
  • Saute in basil and oregano
  • Let the egg mixture set, sprinkle mozzarella on top
  • Put the pan in the broiler for 3-5 minutes until the eggs is firm
  • Cut with a pizza cutter in to slices and serve
