Paleo Pancakes | Paleo Crepes

I usually make paleo pancakes with sweet potatoes but it can be heavy in the morning for breakfast. This paleo pancake recipe has been on our favorites list for a while. It tastes delicious! It’s like eating thin slices of cake without it crumbling apart. Our kids ask for it for breakfast all the time! I make the pancake for the kids sometimes on the weekends. On Valentine’s Day, I shape them as hearts and make a face by adding fruits and nuts.

I usually quadruple the recipe to have leftovers. They can be frozen like those premade pancakes you buy in the store. It can be reheated and toasted. Very convenient in the morning when you have little time.
