Paleo Friendly: Sunny Side Up Eggs with Guacamole

This is the quickest breakfast I’ve made and it tastes very good. Simple and quick is what I strive for in the morning. You must be thinking, but you included guacamole. That means prep work! Nope, I buy those mini pre-made guacamole cups from the supermarket that are for kids lunch boxes. They last for a long time in the fridge so I don’t have to keep making new guacamole anytime I need it for a recipe. I have tons of them in the fridge for when I like to dip veggies into them as snacks. After you cook the sunny side up eggs, use one of those mini guacamole cups and spread it on or beside the eggs. Looks and tastes delish!

Instructions:

  • Ingredients

  • Preheat the skillet on medium-low
  • Add the ghee until melted

  • Crack the eggs onto the skillet
  • Cook for about 3 minutes until you see the light brown crust around the eggs

  • Cover the skillet with a lid and cook for another 1-2 minutes
  • Sprinkle a pinch of salt and pepper for taste

  • Using a spatula and scoop the eggs on to the plate
  • Either put the guacamole on the side or spread it on top
  • Optional: Add some hot pepper flakes or Frank’s Hot Sauce and serve

  • 2-3 Eggs
  • Pinch of Salt and Pepper
  • 1 Guacamole Mini Cup

  • Cook for about 3 minutes so that you see a slight brown crust
  • Cover the skillet with a lid and cook for 1-2 minutes
  • Sprinkle a pinch of salt and pepper for taste
  • Using a spatula and scoop the eggs to the plate
  • Either put the guacamole on the side or spread on top
  • Optional: Add some hot pepper flakes or frank's hot sauce and serve

Notes

I serve some cut fruit on the side with this breakfast meal.
